Radiant Rainbow Salad

Ingredients
  

SALAD

  • 1 large avocado seeded, peeled and diced
  • 1 red bell pepper seeded and diced
  • ½ large cucumber diced
  • 1 small navel orange peeled and diced
  • 1 apple cored and diced
  • ½ cup green onions diced
  • 2 cups mixed leafy greens (such as spinach, arugula, or kale) roughly chopped

DRESSING

  • 1 to 2 Tbsp rice wine vinegar
  • 1 Tbsp olive oil
  • 1 Tbsp ginger minced
  • 1 tsp lemon zest
  • 1/3 cup cilantro chopped
  • Salt and pepper to taste

Instructions
 

  • In a large salad bowl, combine the diced avocado, red bell pepper, cucumber, orange, apple, green onions, and mixed leafy greens.
  • In a small bowl, whisk together the rice wine vinegar, olive oil, minced ginger, lemon zest, chopped cilantro, and season with salt and pepper to taste.
  • Drizzle the dressing over the salad ingredients and toss gently to ensure everything is evenly coated with the dressing.
  • Serve immediately for the freshest taste, or refrigerate until ready to serve.
