Radiant Rainbow Salad
Ingredients
SALAD
- 1 large avocado seeded, peeled and diced
- 1 red bell pepper seeded and diced
- ½ large cucumber diced
- 1 small navel orange peeled and diced
- 1 apple cored and diced
- ½ cup green onions diced
- 2 cups mixed leafy greens (such as spinach, arugula, or kale) roughly chopped
DRESSING
- 1 to 2 Tbsp rice wine vinegar
- 1 Tbsp olive oil
- 1 Tbsp ginger minced
- 1 tsp lemon zest
- 1/3 cup cilantro chopped
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the diced avocado, red bell pepper, cucumber, orange, apple, green onions, and mixed leafy greens.
- In a small bowl, whisk together the rice wine vinegar, olive oil, minced ginger, lemon zest, chopped cilantro, and season with salt and pepper to taste.
- Drizzle the dressing over the salad ingredients and toss gently to ensure everything is evenly coated with the dressing.
- Serve immediately for the freshest taste, or refrigerate until ready to serve.
