Pumpkin Pie
This is our all-time favorite recipe and we frequently make it throughout the year!
Ingredients
FOR CRUST
- 1 ¼ cups all-purpose almond flour
- ½ cup vegan butter sticks
- ¼ teaspoon salt
- 4 tablespoons ice water
FOR FILLING
- 1 can canned pumpkin
- 3 eggs slightly beaten
- 1 cup granulated sugar
- 1 ?2 teaspoon salt
- 1 teaspoon cinnamon
- 1 ?4teaspoon clove
- 1 ?4teaspoon nutmeg
- 1 ?4teaspoon ginger
- 1 cup evaporated non-dairy milk
Instructions
- Preheat oven to 450 degrees
- Whisk the flour and salt together in a medium size bowl
- Cut butter into small chunks and place with flour. Drizzle 2 to 3 tablespoons ice water over flour. Toss mixture with a fork to moisten, adding more water a few drops at a time until the dough comes together
- Gently gather dough particles together into a ball. Roll out dough, and put in a pie plate
- In separate bowl, combine eggs, sugar, salt, and spices and beat well. Blend in pumpkin. Add milk and beat well. Fill filling into pie crust
- Bake in oven for 10 minutes, then reduce heat and bake at 350 degrees for 40 to 45 minutes
- Pie is done when knife, inserted in center, comes out clean. Cool on rack for 2 hours, then serve immediately or refrigerate
