Low-Fat Quinoa Chili
It made it into Oxygen Magazine! It’s healthy, filling & gives you great energy. It’s a great fall/winter recipe.
Ingredients
- 1/2 cup quinoa
- 1 cup water
- 1 16-oz can black beans
- 1 tsp chili powder
- 1 tsp curry powder
- 1 tsp cinnamon
- 2 scallions diced
- 1/4 cup tomatoes diced
- 1/4 tsp stevia to taste
Instructions
- Bring quinoa and water to a boil and simmer for 15 minutes until germ separates.
- In a separate pot simmer black beans together with seasonings for10 minutes. Allow beans to cool and thicken for 5 minutes.
- Combine quinoa and bean mixture together. Top with tomatoes and scallions and serve.

Quinoa is used as a grain because of its cooking characteristics. It is actually a relative of spinach, beets, and Swiss chard.

- a good source of protein, containing all nine essential amino acids, making it a complete protein source.
- provides dietary fiber, vitamins (such as B vitamins),
- minerals (like magnesium, iron, and potassium),
- and antioxidants.
