Corn Pudding

This Corn Pudding recipe has been a Thanksgiving staple in my family for years!

Ingredients
  

  • 1 stick of butter 1/2 cup melted
  • 1 can of corn include liquid (15.25 oz)
  • 1 can of creamed corn 14.75 oz
  • 2 large eggs
  • 1 box of cornbread mix (check for GF) 8.5 oz
  • 1 cup of sour cream

Instructions
 

  • Preheat oven to 350 degrees.
  • Put 8x8 baking dish (1.5-2 qt size) in the oven with the stick of butter as the oven heats up.
  • This way, the butter melts in the baking dish and you can brush the melted butter up the sides of the dish so you don't have to grease the baking dish.
  • Remove the dish with the butter once it's melted and let butter cool slightly, then mix all the ingredients together in a mixing bowl, then dump back into baking dish.
  • Bake 45-50 minutes until set and the top is a golden brownish color.
  • Allow to cool slightly and then dig in!
